Grapes harvested at perfect phenolic ripeness
Cold maceration for 12-24 hours, gentle pressing and fermentation at 14-16° C for 10/15 days. Maturation in stainless steel vats.
12,5 % vol.
Pronunced aromas of red fruit, raspberry and wild cherry in particular.
Round, fresh and intense. Long finish.
Ideal with light starters, fish, white meat, seafood risotto, pasta. It matches well also with more structured dishes thanks to its acidity.
Serve at 9/10° C.
