Grapes harvested at perfect phenolic ripeness
Soft crushing and destemming. Fermentation with maceration at 20/24 °C . Gentle pressing. The wine is then passed over the skins of Amarone della Valpolicella.
15 % vol.
Deep Ruby Red with a Garnet rim as it ages
Pronounced aromas of ripe fruit and spices
Full bodied, pleasant notes of ripe fruit, spices, vanilla, soft velvety tannins and a long finish.
Recommended with risottos (with mushrooms, red chicory, Tastasal), pasta with beans, stew and braised meat with the typical Veronese sauce “Pearà”.
Serve at 18-20 °C
