Tenuta Valleselle’s Soave Classico Dop “Pastel” was awarded 90 points from German Falstaff magazine on the occasion of the Falstaff Soave Trophy!
Obtained from Garganega and Trebbiano grapes, Soave Pastel is produced in the Soave Classico area north-east of Verona. The fresh grapes are harvested by hand, they are then crushed and destemmed and subjected to soft pressing, followed by fermentation with selected yeasts at a controlled temperature (14-16°C). Ageing is carried out in steel casks. The wine has a straw yellow colour with greenish highlights and boasts an aroma of citrus fruit, white flowers and slight notes of honey. Harmonic and fresh palate with a hint of fruitiness, nice acidity and good structure (13% alcoholic strength). Ideal as an aperitif, it also works well with more structured meals such as summer first courses and fish.
